Chicken Cafreal

Ingredients 

- Chicken (1.5 Thighs)
- Coriander (20g)
- Garlic (1 Clove)
- Ginger (1 Piece)
- Cumin Seeds (1tsp)
- Chilli (Half tsp)
- Lemon Juice
- Turmeric (0.5tsp)
- Rice (90g)
- Lemon

Recipe 

(Serves 1)

1. In a blender add, roughly cut coriander, garlic, ginger, cumin seeds, salt, pepper, chilli, and lemon juice and blitz till a fine paste
2. Cut the chicken into pieces and add turmeric
3. Coat the chicken in the spice mix and let it marinate in the fridge for a couple of hours
4. Add boiling water to the rice and let it cook until nice and fluffy (about 10 mins)
5. Put oil in a pan and once hot add the chicken and cook until slightly browned on the outside
6. Add a dash of water to the blender and use it to get the residue of the spice mix
7. Add this to the chicken and let the chicken cooked in the covered pan for 15 minutes (or until cooked) on a medium heat
8. Serve with rice, lime, and extra coriander on top
